Insalata di riso con mortadella e formaggio dolce

Pronti,partenza ..via.Ricomincio.Le ferie sono finite,sono tornata da una manciata di giorni.E all'inizio ci sono diecimila cose da fare.Le valigie da disfare,cose ed idee nuove da sistemare,catalogare e una sana e irrinunciabile pigrizia da coltivare ma non troppo.

Ringhio contro il caldo eccessivo e me lo posso permettere...non mi sono mai lamentata del freddo ^_^ Abituata agli inverni mitteleuropei quello nostro è uno stuzzichino per me.Ma non sono abituata ai miraggi,all'asfalto che sfrigola e agli abbracci estremamente confidenziali con il ventilatore dopo quelli passionali con il condizionatore.

L'estate è bella.E' bella quando la puoi combattere.Quando ti ritrovi a dire:"Che caldo" in posti come questi:

Quindi mie care amiche eccomi qui,pronta lavata e stirata dopo la mia settimana di vacanza,pronta per ripartire!


Insalata di riso con mortadella e formaggio dolce (da un'idea di Cucina Moderna)

250 gr riso
120 gr formaggio dolce
160 gr mortadella a dadini (Felsineo)
100 gr pomodori ciliegino (per una versione più gustosa 100 gr pomodori secchi sott'olio)
60 gr capperi sgocciolati
1 mazzetto di prezzemolo
olio extravergine d'oliva
sale,pepe
1 cucchiaio di aceto balsamico

Mentre il riso cuoce,mettete la mortadella tagliata a dadini in una terrina.Unite il formaggio dolce tagliato anch'esso a dadini.Unite i capperi sgocciolati e i pomodorini tagliati a pezzetti (o in alternativa i pomodori secchi tagliati).
Unite il riso raffreddato sotto un getto d'acqua per fermarne la cottura.Condite con l'olio ,il sale il pepe e l'aceto balsamico.Unite il prezzemolo tritato,mescolate.lasciare riposare al fresco per almeno due ore.
Servite.

 Prendere delle friselle ,io ho utilizzato quelle dell'azienda OROPAN .Bagnarle un pochino con acqua ,strofinare dei pomodorini e farne alcuni a pezzetti;un filo d'olio a crudo io ho utilizzato l'olio Stella del Frantoio stella,due acciughine origano e qualche oliva e..buon appettito.Ovviamente non è una ricetta che richiede abilità culinaria ,ma solo l'abilità di utilzzare ottimi prodotti essendo un cibo semplice.

Pane semprepronto Oropan ripieno di prosciutto cotto alle erbe,mozzarella ,pomodorini e un filo d'olio.
